So to help those trying to stick with the diet over the lockdown, I’ve started building a keto cookbook. I’m dangerous and unreliable in a kitchen setting, so these recipes are going to be ones that you can bank on. Simple to execute, but delicious enough to stop you reaching for the real cookie jar.
I’ll continue with my tradition of posting recipes for free on my website in the meantime, so don’t think I’m stealing them away from you!
Coconut Chocolate Chip Cookies
Another keto recipe to get you through the tough spots in a diet that's taking its sweet time. I love cookie recipes for this, because they're so damn easy. Just make the mixture, set them on the tray, and you're done. The hardest part is waiting.

- Baking Tray
Ingredients
- 180 g Peanut Butter
- 45 g Dark Chocolate Chips The higher the cocoa percentage, the better.
- 30 g Chopped Walnuts
- 30 g Erithrytol
- 1 large Egg
- 1 tsp Vanilla Essence
- 60 grams Protein Powder
- 2 tbsp Ground Flax seeds
- 1/4 tsp Xantham Gum
- 20 grams Coconut Flakes
Instructions
- Preheat the oven to 190c, and mix all the ingredients except the chocolate chips and coconut flakes
- Fold in the chocolate chips and coconut flakes. Set balls of the dough on a baking tray and flatten them with a spoon.
- Leave them in the oven for 14-18 minutes, or when they just start to brown. Let them cool off on the counter and sprinkle on a few extra flakes.
